About this hotel
General information
Chablé Yucatán is a spa resort in the Maya jungle near Chocholá, about 40 km from Mérida. At its core is a restored historic hacienda: the former owner’s residence, Casa Principal, now holds a bar, a library and a gallery for the Chablé art collection. Private casitas and villas are scattered through the dense greenery around it, contemporary architecture set into the landscape, with Mexican tradition carried by natural stone floors, locally woven textiles and hand-carved wooden furniture.
The interiors, built from local materials, are the work of Mexican designer Paulina Morán. The heart of the resort is Chablé Spa beside a natural cenote sacred to the Maya, where treatments are given by Maya healers. Both restaurants are led by chef Jorge Vallejo, and the cooking is shaped around the wellness concept. Chablé is not an all-inclusive resort; each stay is tailored individually.
Location
Chocholá, Yucatán: the resort lies in the Maya jungle some 40 km from Mérida, a 45–50 minute drive from Mérida International Airport (MID). Private airport transfers can be arranged.
Spa
Chablé Spa is built around a natural cenote, a freshwater sinkhole held sacred in Maya culture. Treatments are given by experienced Maya healers and wellness practitioners drawing on local tradition. The three signature journeys are Fountain of Youth, Tree of Life and Heaven on Earth; there are massage cabins, a beauty salon, a water ceremony and yoga by the cenote.
Sports & leisure
Wellness and life outdoors go hand in hand here:
- yoga by the cenote and wellness retreats
- a Wellness Golf course designed by Augustín Pizá, with coaching for all levels
- the Green Path cycling trails through the resort gardens
- La Granja de Abu farm: melipona honey, orchids, animal feeding and garden walks
- a meliponarium for encounters with stingless bees and honey-harvest ceremonies
- Maya cooking classes at Casita Maya using home-grown produce, and a beeswax workshop
- cenote visits with diving, and trips to archaeological sites
For children
The Kids Club is designed as a cluster of linked cylinders inspired by the myth of K’uk’ulkaan, with workshops in pottery, astronomy, cooking, drama and Maya culture. Families can also take the two-bedroom Family Villa, which sleeps six.
Restaurants & bars
The cooking relies on local, seasonal ingredients and the traditions of Yucatán:
- Ixi’im — refined Mexican cuisine with a local focus by chef Jorge Vallejo; the name means “corn” in Maya
- Ki’ol — wholesome, balanced cooking from the same chef, built around the freshness and flavour of each ingredient
- Casita Maya — a palapa where local cooks prepare time-honoured Yucatecan recipes and teach cooking classes
- Sikar Bar — classic spirits, garden seating and vintage architectural details
- Casa Principal — bar, library and gallery in the hacienda owner’s former residence, with a terrace and water features
