Saffire Freycinet

About this hotel

General information

Saffire Freycinet is a small lodge on Tasmania’s east coast, at the gateway to Freycinet National Park. It opened in 2010 to a design by Hobart practice Circa Morris-Nunn Architects: the main building’s curving roof recalls a stingray and frames the pink granite peaks of the Hazards, while the 20 suites are set in a line along the slope like boats drawn up on the sand, each facing Great Oyster Bay and the mountains.

Stays are all-inclusive, covering breakfast, lunch and dinner at Palate, drinks, the minibar and a set of signature experiences, from oyster tasting at a working farm to an encounter with Tasmanian devils. Interiors pair Tasmanian timber, stone and leather with pieces by Australian designers, and the property spreads across 11 hectares of coastal bushland.

Location

Coles Bay on the Freycinet Peninsula, about 2.5 hours’ drive from Hobart and around 2 hours from Launceston. From Hobart there is also a helicopter transfer of under 45 minutes, or a seaplane that lands on the water near the lodge; chauffeured transfers run from both airports.

Spa

The spa, with a dual treatment suite, a steam room and a bathing area, works with LaGaia and Payot. Its rituals draw on the surroundings: hot stones of Hazards pink granite and volcanic basalt, lavender, amber salts and native botanical extracts. The signature Mountain Dreaming combines stone massage, a facial, scalp therapy and a foot ritual, and is suggested after a hike in the national park.

Sports & leisure

Included in the stay are guided walks to the Wineglass Bay Lookout and around Cape Tourville Lighthouse, the two-hour Connection to Country walk with a palawa artist, a visit to a private apiary, waders-on tasting at Freycinet Oyster Farm, the Tasmanian Devil Experience in the lodge’s conservation enclosure and Saffire After Dark stargazing. Kayaking, birdwatching and a studio gym are also available. At extra cost: coastal cruises, scenic flights, a Waubs Harbour Distillery tour and a mixology class (both 18+).

Restaurants & bars

Palate is reserved for in-house guests and cooks with Tasmanian produce: a farm-style breakfast, à la carte lunches of local seafood and garden vegetables, and in the evening a daily-changing degustation or à la carte menu. Canapés and cocktails come first in The Lounge, which pours small-batch Tasmanian gin, single malts and wine, and serves coffee through the day. In-suite dining is available at any time.
